A good chef always samples the product.

N8N food correspondent Kelly Willoughby found herself struggling with a glut of tomatoes from her garden. What to do? Make pizza sauce, of course!

Ingredients

a bucket of tomatoes
1-2 courgettes
8 onions
16 cloves garlic
Large handful fresh basil
1-2 tbsp olive oil
Salt & pepper
1/2 tsp dried coriander

Peel and chop onions and garlic.

Fry in oil, then add chopped tomatoes and courgette (don’t tell anyone there’s courgette in it, they’ll never know!)

In go the tomatoes, courgettes, and herbs.

Add herbs – basil and coriander in my case – and reduce as much as possible.

After 30 minutes of cooking, blend in a food processor.

Post-blending, it's starting to look saucy.

Return to heat and season to taste.

Once it’s thickened, you have delicious pizza sauce! I freeze mine in zip lock bags. But not before I’ve tested out on home-made Pizza!
