Blueberry muffins – oh my

Our blueberry bush is groaning with fruit at the moment.   Most years the birds got more than their share, until we foiled their evil designs by throwing a net over the hard-working bush. The other morning I was greeted by a blackbird stuffed to perfection, and wanting help getting out!

We’re going to try making blueberry ice cream and a few other treats but our all-time favourite is this muffin recipe, created by Kelsy Fletcher.  (For more seriously drool-making dishes, check out Kelysy’s website, Miss Cookie, here. ) These muffins never fails to please.  In fact, I’d go as far as saying this is the best blueberry muffin recipe ever.  Crunchy on top, popping with tasty blueberries, moist, flavoursome – just delectable.

It is simple to make and I imagine would freeze well – but they don’t last long.   Must be time to send the husband out a-harvesting again.

And, yes, being soft of heart, I let that bad bird out.

BLUEBERRY MUFFINS

1 1/2 cups flour
1 1/2 tsp baking powder
3/4 cup soft brown sugar
3/4 cup blueberries
1/2 tsp cinnamon
1 egg
3/4 cup milk
100g butter
1tsp lemon rind
Preheat oven to 200C.  Grease muffin tray or use cupcake cases.  This recipe will make a good seven big muffins – depending on the size of pan or cases.
In a large bowl, mix together the flour, baking powder, cinnamon and brown sugar – use your hands to remove any lumps.  Stir in the blueberries – rinse with water to remove any twigs etc. if from your garden!
Melt the butter in a small pan, and gently warm milk.  Beat the egg with a fork in a little cup, and mix the egg, butter and lemon rind together with the milk.
Add this to the flour, and mix quickly with a wooden spoon until there are no dry ingredients – do not overmix, muffins like a light touch.  Use your hands to sprinkle with raw sugar and bake about 20 minutes or until cooked.  (Use a skewer to test.)  Allow to cool and then enjoy!
